Christmas Snowballs Recipe
Servings: 40-50 snowballs
Ingredients:
– 2 cups powdered sugar
– 1/2 cup (1 stick) unsalted butter, softened
– 2 cups crushed vanilla wafers (or pecans)
– 1 teaspoon pure vanilla extract
– 1/2 teaspoon salt
– 1/4 teaspoon ground cinnamon (optional)
– Confectioners’ sugar, for dusting
Instructions:
1. In a large mixing bowl, cream the butter and powdered sugar until light and fluffy.
2. Stir in the crushed vanilla wafers, vanilla extract, and salt until well combined.
3. Add the cinnamon, if using.
4. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
5. Preheat the oven to 350°F (180°C).
6. Remove the bowl from the refrigerator and use a cookie scoop or spoon to form the mixture into 1-inch balls.
7. Place the balls onto a baking sheet lined with parchment paper, leaving about 2 inches between each snowball.
8. Refrigerate for an additional 30 minutes.
9. Bake for 12-15 minutes or until lightly browned.
10. Remove from oven and let cool on wire racks.
11. Dust with confectioners’ sugar.
