Try to pick bananas that are just right-not too green, not too brown. I was stressing a little about finding the “perfect” bananas. When I hit the grocery store, all I saw were either super green ones or those covered in brown spots. Figures, right?
So, yeah, I’m that person who goes to two different stores just to find good bananas. Ended up buying like two dozen! Sounds crazy, but my family of five crushes bananas like you wouldn’t believe in a week…. These are the best bananas I could find! (I might have left some of the brown spots out. ????) But if you can’t find perfect ones, don’t worry. These nearly under-ripened bananas worked wonderfully, and I’m sure a few spots won’t hurt either.
How to Make Monkey Butter Recipe
1.I just don’t recommend using over ripe bananas, or it will end up tasting crazy sweet.
2. I used “macaroon” coconut from the bulk store, which is just ground-up coconut flakes (unsweetened). If you can’t find it, no biggie—just toss a couple of tablespoons of regular coconut flakes into a food processor and pulse until they’re in small pieces.
3.Put all the ingredients into a large nonstick pan.
4.Bring the mixture to a boil on high heat, stirring frequently.
5.Turn the heat down to low and let it simmer until the banana melts down and the mix gets thicker. Took me about 15 to 20 minutes.
6.It ends up having a texture similar to apple sauce. Maybe just a little bit thicker than apple sauce.
As I mentioned, it’s PERFECT for ice cream. You can also spread it on toast or with pancakes or waffles. I bet it’d be awesome mixed right into the pancake batter too.
The lemon juice keeps the bananas from going brown, so it will last in the refrigerator for about 4 to 6 weeks.
