I’m a fan of chocolate mousse, so naturally, chocolate mousse was my first love, the low-carb version of it, that is!

Not really liking to spend much time without something sweet while growing up with such a huge sweet tooth, I wouldn’t make it more than a week before having something sweet, keeping keto, of course! These days, my choice used to be heavy cream and unsweetened cocoa. Now, I’ve learned some tricks!

This version is even yummier. Adding only a few more ingredients, this is still keto-friendly but tastes twice as yummy as my original.

I love this chocolate mousse low on carbs not only for its silky texture and creaminess but because it is sweetened with safe chemicals-free natural ingredients.

Being that I am much more attentive to the issue of what I am putting into my body with this low-carb lifestyle, many things like instant pudding sitting in the baking aisle are no longer acceptable. And most them are littered with ingredients I’ve come to accept in the previous years but no longer want in my body-especially those so-called ‘sugar-free’ versions.

And now, I know what is going into my mouth-no more reliance on overly processed, high-calorie convenience foods! Quality always overrules convenience for me.

How To Make Low Carb Chocolate Mousse

All you have to do is to throw in all the ingredients into a big bowl. Now, get your electric mixer. Turn to medium speed and mix until your arms ache—or for about 3 minutes. That’s when you know you have achieved the right consistency, the mousse smooth, silky, and holds stiff peaks. Piece of cake, isn’t it? ????

Honestly, I love having a quick and easy recipe like this on hand when I am craving something chocolatey and sweet. You can always adjust how sweet you want it to be-all you need to do is add a little more or less sweetener. Need a deeper flavor of chocolate? Toss in a little more cocoa. Easy peasy!

I love how creamy this mousse turned out, and it’s so satisfying! Thanks to the heavy cream, which is a high-fat dairy, this also doubles as a ‘fat bomb.’

Every spoonful of this keto chocolate mousse is bliss, with the richness of creamy blended in with a light, airy feel that just dances across your taste buds. Sweetened by monk fruit, this is a guilt-free indulgence that will curb those cravings while staying true to your keto way of life. Ingredients

  • 3 teaspoons vanilla extract

  • 2 cups heavy cream

  • 1.5 cups softened

  • ½ cup cocoa powder unsweetened

  • ¼ cup monk fruit sweetener

  • A pinch of salt

Directions

  • Prepare for whipping: Chill the mixing bowl and beaters in the refrigerator for at least 30 minutes before you start. This helps the cream whip up better.
  • Whip the heavy cream: Use an electric hand mixer to whip the heavy cream on low speed in the chilled bowl. Gradually increase the speed to medium-high, continuing to whip until the cream forms stiff peaks. Be careful not to over-whip.
  • Blend cream cheese: Mix the softened cream cheese in a separate bowl until smooth. If it’s too thick, a little bit of the whipped cream can be mixed in to lighten it up.
  • Combine cream cheese with cocoa powder and vanilla: Add the cocoa powder, vanilla extract, and a pinch of salt to the cream cheese mixture. Mix until well combined.
  • Add sweetener to cream: Gently fold the monk fruit sweetener into the whipped cream, ensuring it’s well distributed.
  • Combine mixtures: Carefully fold the whipped cream into the cream cheese mixture, trying to keep the mixture light and fluffy.
  • Pipe into ramekins: Transfer the chocolate mousse into a plastic piping bag and pipe it evenly into ramekins.
  • Chill & serve: Refrigerate the mousse for at least 1 hour to allow it to set. Serve the mousse chilled and garnished as desired.
